Bubba’s Q Super Chili


2 T olive oil
1 chopped onion
5 celery stalks, diced
1 large green pepper, chopped
1 pound ground beef, seasoned
1 14.5 oz can diced tomatoes
1 6 oz can tomato paste
1 large can tomato sauce
1 16 oz. bottle tomato juice
4 oz. red wine vinegar
2 cloves garlic, minced
4 oz. dark chili powder
2 t dried cilantro
1 T cumin
1 t cayanne pepper
1 pinch of white sugar
salt & pepper to taste
1 15 oz. red kidney beans (optional)

Bubba’s Coaching Points:

Cook ground beef and season with salt & pepper, drain in colander.
Heat oil, then saute the chili powder very slowly until it smells up your kitchen (key to this chili) Do not burn.
Add onions, celery, green peppers and garlic.
Now add the remaining ingredients leaving the meat for last.
Stir really good and reduce the heat and simmer for one hour, 30 minutes, uncovered.
Optional: add beans (I don’t use them)
*This is best made the day before, then warm up in the crock pot for the big game all day. Eat in the bowl with sour cream, green onions, nachos, chili dogs or over a baked potato!
